- Add a little crunch to your green salad with toasted goat cheese baked in crispy breadcrumbs.
Toasted Goat Cheese Salad
- 1/4 cup breadcrumbs
- 2 tablespoons fresh mixed herbs (rosemary, thyme, parsley, or oregano)
- 1 4oz La Bonne Vie Goat Cheese Log
- 6 cups mixed greens
- 1/2 olive oil
- 1 clove garlic, minced
- 1 teaspoon course salt
- 1/2 teaspoon fresh cracked pepper
- 1/4 cup balsamic vinegar
Pre-heat oven 350. Finely chop herbs and toss with breadcrumbs. Spread breadcrumb mixture on a plate. Firmly roll goat cheese through breadcrumb mixture to evenly cover goat cheese. Place goat cheese on a baking sheet. Bake goat cheese for 3-4 minutes until warmed. While goat cheese bakes, place all the dressing ingredients in a mason jar and shake for 30 seconds- 1 minute until ingredients emulsify. Place goat cheese on top of greens and drizzle with dressing. Serve warm.
