A twist on a favorite, this dish turns a savory dinner into a sweet dessert.

Fruit Pizza with Blueberry Goat Cheese

Fresh Doug for Crust (Blueberry Goat Log-Pizza Pizza Crust purchased is option)

  • 28 oz 00 Flour
  • 7 oz Semolina Flour
  • 2 oz Extra Virgin Olive Oil
  • 1 teasp. Sea Salt
  • 20 oz Water luke warm
  • 1/2 oz Yeast Instant
  • 1/2 oz Sugar Granulated


  • 16 oz Cream Cheese
  • 8 Egg Yolks
  • 3 tbs Corn Starch
  • TT Vanilla
  • TT Sugar
  • TT Cinnamon
  • TT Cardamom


  • Fresh Blue Berries, Sliced Strawberries, Slices Blue Berry Goat Cheese. Tupelo Honey for drizzle

Pizza Dough

Mix the water with the Sugar and yeast. In a Mixer with a dough hook attachment.

Slowly add the two flours slowly mix until the flour is incorporated, add the salt and Olive Oil mix a medium speed until the dough comes clean of the bowl and hook about 10 min.

Remove from the Mixer and place into an oiled Bowl. Cover with Plastic wrap and rest in a warm area for 30-45 min until the dough doubles in volume.

Portion the dough. Shape and Rest on the Bench until the toppings are ready.

Pre Heat the Pizza Stone 425F.

Shape the Pizza Dough place on a Pizza Pile dusted with Semolina Flour.


Mix the Cream Cheese until smooth add the Egg Yolks and Corn Starch add the Sugar, Cinnamon and Cardamon.

Spread a layer on the Pizza Dough arrange the Blue Berries, Strawberries and the Sliced Goat Cheese.

Drizzle the Top with Tupelo Honey, Bake until the Crust is golden Brown.
